Gluten Free Chocolate Chip Cookies

Makes approximately 70 cookies, can be prepared 2 days ahead store mix in an airtight container at room temperature.

This is a truly wonderful wheat free twist on and old favorite, the Chocolate Chip Cookie, but only you will know its gluten free. This wheat free cookie will fool even the most discriminating cookie lover. It is made by substituting gluten free Nuchia Original Chia Seed Flour for wheat flour in a traditional chocolate chip cookie recipe. Cut recipe in half for smaller batch.

Ingredients

  • 6 cups of Nuchia Original Chia Seed Flour
  • 2 teaspoons of baking soda
  • 2 teaspoons of sea salt
  • 2 cups (4 sticks) of unsalted butter, room temperature
  • 2 cups of brown sugar
  • 2 cups sugar
  • 4 large eggs
  • 1 1/2 tablespoon of pure vanilla extract
  • 3 cups of semi sweet chocolate chips
  • 1/2 cup of water

Directions

Preheat oven to 325 degrees. Spray large rimmed baking sheet with nonstick spray. Mix together Nuchia Original Chia Seed flour, baking soda, and salt in a medium bowl. Using electric mixer, beat butter in a separate large bowl until light and fluffy. Add sugar and brown sugar to butter mixture, blend until creamy and well mixed. Add eggs one at a time, and vanilla, then water beating until creamy and well mixed. Gradually add chia seed flour mixture, beating just until well blended. Stir in chocolate chips.

Drop dough by heaping tablespoonfuls onto prepared baking sheet, spacing 3 inches apart. Bake cookies until pale brown, about 10 to 12 minutes. Cool 5 minutes on sheet. Transfer cookies to racks and cool completely.
